Left unglazed and a little porous, it let a thread of water seep through and evaporate off the surface, and that slow evaporation pulled the heat out and kept the water inside cool through the hottest part of the day. Think of it as the olden-day water bottle, the narrow neck made for carrying and pouring, small enough to take out to the field for the day and bring back empty.
