Found in central France and dating to the early 1900s, this antique copper fish pan was originally made for poaching whole fish, complete with brass handles shaped like curling tails and a lid topped with a fish finial that leaves no doubt about its purpose. It comes with its inner perforated tray, designed to cradle the fish and lift it cleanly - because the French were never going to make this easy on themselves. Once the pride of a serious kitchen, it now lives best out in the open: stretched across a long shelf, centered on a kitchen island, or leaned along the back of a range where the copper catches the light and everyone asks about it.
