One-Of-A-Kind

A pan made for many, not just a few. Found in Villeneuve-lès-Avignon and dating to the 19th century, this oversized copper daubière was made for slow cooking - long braises set low over a fire or tucked into an oven, where tougher cuts would soften over hours into something rich and deeply flavored. The form is wide and grounded with straight sides and two iron handles riveted in place, built to be carried when full. The copper has taken on a deep, warm tone with soft rippling from hand work, while the interior shows the wear of years of use. Sylvie loves it set at the center of a kitchen island, filled with fruit or left empty to let the scale speak for itself.
